Baked Turkey Patties with Summer Vegetables — A Light, Satisfying Meal for Mothers
Made with lean ground turkey, grated zucchini and oven-roasted summer vegetables, these light patties are baked rather than fried — a practical choice for mothers looking for a balanced, filling meal. Ingredients
- 300 g Lean ground turkey
- 1 small Zucchini (grated, liquid squeezed out)
- 1 small Onion (finely grated)
- 1 clove Garlic (crushed)
- 1 piece Egg
- 3 tablespoons Fresh parsley (finely chopped)
- 1 teaspoon Ground cumin
- 1 teaspoon Sweet ground paprika
- 1 pinch Black pepper
- 1 pinch Salt
- 1 tablespoon Extra virgin olive oil
- 10 pieces Cherry tomatoes
- 1 piece Bell pepper (chopped)
- 0.5 piece Lemon (to serve)
Directions

Heat the oven to 200°C and line a baking tray with parchment paper.

Squeeze the grated zucchini firmly in your palm to drain the liquid; this helps the patties hold their shape without falling apart.

In a large bowl, combine the ground turkey, drained zucchini, grated onion, crushed garlic, egg, parsley and spices, then knead by hand for two to three minutes.

Take walnut-sized pieces of the mixture, press them lightly into flat patties and arrange them on the tray with space between each.

Tuck the chopped bell pepper and cherry tomatoes among the patties and drizzle the olive oil over the top.

Bake in the preheated oven for 25-30 minutes, until the patties are cooked through and lightly golden on top.

Remove from the oven and let rest for a few minutes; squeeze fresh lemon over the top and serve warm.
