Baked, not fried, and wonderfully soft fritters made with grated potato and carrot. A colorful, satisfying snack your two-year-old can hold and eat on their own.

    Heat the oven to 190°C (375°F) and line a tray with baking paper.

    Finely grate the boiled potato and the carrot and place them in a bowl.

    Add the egg, rice flour and chopped parsley; mix until you have a soft, shapeable mixture.

    With damp hands, form small flat patties and arrange them on the tray; drizzle a little olive oil over the top.

    Bake for 20-25 minutes, until lightly golden underneath, keeping the inside soft.

    Serve warm. Offer them to your two-year-old in finger-thick strips and always under supervision; if serving for the first time, start with a small piece.
