Fennel and Vegetable Soup for Mothers — A Warm, Gentle Meal for the Breastfeeding Season
A gentle vegetable soup made with fennel, carrot and potato for mothers looking for a warm, light and satisfying meal during breastfeeding and the postpartum period. Cooked easily in a single pot, it can help support daily fluid intake and is flavoured with fennel, a vegetable traditionally favoured at the table of breastfeeding mothers.
Ingredients
- 1 piece Fresh fennel (bulb)
- 1 piece Carrot
- 1 piece Potato (medium)
- 1 piece Onion
- 1 piece Celery stalk
- 2 tablespoons Olive oil
- 1.2 litres Hot vegetable stock or water
- 1 teaspoon Salt (in moderation)
- 1 pinch Black pepper
- half piece Lemon (optional)
Directions

Wash the fennel bulb; set aside the feathery fronds for garnish and thinly slice the bulb. Chop the onion and celery stalk.

Heat the olive oil in a pot; add the onion and fennel slices and sauté over low heat for 5–6 minutes until softened and lightly coloured.

Add the diced potato and the sliced carrot; cook, stirring, for a few minutes.

Pour in the hot vegetable stock and bring to a boil. Lower the heat and simmer for about 20–25 minutes, until the vegetables are completely tender.

Season with salt in moderation and a pinch of black pepper. If you like, partly blend with a hand blender for a creamy texture, or leave it chunky.

To serve, garnish with the reserved fresh fennel fronds; squeeze over half a lemon if you wish and serve hot.
