Ingredients

Directions

  1. 1

Wash the fennel bulb; set aside the feathery fronds for garnish and thinly slice the bulb. Chop the onion and celery stalk.

  2. 2

Heat the olive oil in a pot; add the onion and fennel slices and sauté over low heat for 5–6 minutes until softened and lightly coloured.

  3. 3

Add the diced potato and the sliced carrot; cook, stirring, for a few minutes.

  4. 4

Pour in the hot vegetable stock and bring to a boil. Lower the heat and simmer for about 20–25 minutes, until the vegetables are completely tender.

  5. 5

Season with salt in moderation and a pinch of black pepper. If you like, partly blend with a hand blender for a creamy texture, or leave it chunky.

  6. 6

To serve, garnish with the reserved fresh fennel fronds; squeeze over half a lemon if you wish and serve hot.

🌱 Why is it nourishing?

Fennel is a vegetable traditionally favoured at the table of breastfeeding mothers; warm and fluid-rich, this soup can help support daily fluid intake. Carrot and fennel add fibre and a variety of vitamins, while potato makes the meal lightly filling. With its light, easy-to-digest nature, it is a balanced option that can be enjoyed comfortably on tiring days.
