Eggplant Purée — A Light, Silky Summer Vegetable for 7+ Months
Made with summer eggplant, gently steamed until soft and mashed until smooth, this purée brings a soft, light vegetable flavor to your baby's first-foods journey from 7 months. Choosing a young, tender eggplant and peeling it lets your little one taste only the vegetable's own mild flavor. With its silky texture, it is a lovely option for little ones just getting to know the spoon.
Ingredients
- 1 small Young, tender eggplant (washed, peeled)
- 2-3 tablespoons Boiled and cooled drinking water (for consistency)
- a few drops Extra-virgin olive oil (optional)

Choose a young, tender eggplant; with fewer seeds and a milder flavor, it suits your baby better. Wash the eggplant well under plenty of water.

Peel the eggplant completely and cut it into small cubes so it softens faster and more evenly.

Steam the cubed eggplant for 12-15 minutes, until it is soft enough to mash easily with a fork.

Transfer the cooked eggplant to a bowl and let it cool slightly, then mash with a fork or blend until perfectly smooth.

If the texture is too thick, thin it with a spoonful or two of the boiled and cooled drinking water until it reaches the softness your baby enjoys. You may add a few drops of extra-virgin olive oil if you like.

Serve lukewarm, close to body temperature. If offering it for the first time, start with a few spoonfuls and watch for reactions over 3 days without adding any other new food.
