Corn and Cheese Mini Muffins — A Soft Summer Snack for 2-Year-Olds

Made with sweet summer corn and soft cheese, these mini muffins are an easy-to-hold, freshly baked snack for your 2-year-old. They are prepared with simple ingredients and no added sugar, and served in small, soft pieces.

    Heat the oven to 180°C (350°F); lightly grease a mini muffin tin or line it with paper cases.

    To reduce the risk of choking, pulse the corn kernels in a blender for a few seconds to break up the larger pieces; no whole kernels should remain.

    In a bowl, whisk together the egg, milk and olive oil.

    Sift in the flour and baking powder, then fold in the grated cheese, corn and, if using, the parsley, mixing only until the batter just comes together.

    Fill each mini muffin cup about three-quarters full.

    Bake at 180°C for 18-20 minutes, until the tops are lightly golden and a toothpick inserted in the centre comes out clean.

    Let the muffins rest in the tin for a few minutes and cool until just warm; serve to your 2-year-old in small, soft pieces and always under supervision.
