Ingredients

Directions

  1. 1

Heat the oven to 190°C and line a tray with baking paper.

  2. 2

Finely grate the boiled potato and raw carrot, then gently squeeze out the excess moisture.

  3. 3

Add the egg, flour, grated cheese and dill and mix into a soft batter.

  4. 4

With damp hands, shape small flat patties, arrange them on the tray and drizzle a few drops of olive oil over the top.

  5. 5

Bake at 190°C for 20-25 minutes, until lightly golden, keeping the centre nice and soft.

  6. 6

Once cooled, cut into finger-length strips for a 2-year-old and serve with plain yoghurt; always stay beside your little one while they eat.

🌱 Why is it nourishing?

Potato gives your little one gentle energy and complex carbohydrates, while carrot adds colour, fibre and beta-carotene, a precursor of vitamin A. Egg and cheese contribute protein and calcium; baking instead of frying keeps the recipe lighter. These hand-held strips can gently support your two-year-old's self-feeding skills.

Maiyko's note

At Maiyko we love meals that are simple, fresh and colourful. Prepare these fritters with little oil and no added salt; using fresh dill brightens both the flavour and the colour on the plate.
