A Mother's Energy: Spinach and Cheese Omelet (Mother's Meal)
A quick, warm postpartum meal that may gently support energy and iron intake: fresh spinach, white cheese and two eggs cooked into a soft, satisfying omelet in just fifteen minutes.

Ingredients
- 2 pcs eggs
- 1 handful fresh spinach leaves (washed, chopped)
- 30 g low-salt white cheese (grated)
- 1 tbsp cold-pressed olive oil
- 1 pinch freshly ground black pepper
- 2 tbsp strained yogurt (to serve)
- 1 slice whole-grain bread slice (to serve)
Directions

Warm a pan over medium heat and swirl in the olive oil.

Add the washed spinach and stir gently for about one minute until it wilts.

Beat the eggs well in a small bowl and add a pinch of black pepper.

Pour the eggs over the spinach, tilting the pan to spread the mixture evenly.

Sprinkle the grated cheese over one half of the omelet and fold it when the base just sets.

Once the bottom is golden, slide it onto a plate and serve with strained yogurt and a slice of whole-grain bread.
